For my domains / hosting I dont want to show the same nameserver as its set up so its on my own server and not like a shared hosting one.
Anyone know or have a easy way to get new nameservers or edit them for each domain without too much of a hassle?
Was thinking of just getting a shared hosting plan but one that is fast enough for some medium traffic...

If you have VPS/dedi hosting where you can purchase multiple IPs I'm sure you should be able to buy a new IP for each domain and add nameservers at a registrar for each one. I imagine the first attempt will be a bit chaotic, but once you get used to the process and DNS zone editing etc it should become pretty fluid for ya.
In any domain registar, they can host the domain for you in their dns server, so basically you just point the www and domain or whatever subdomain you have to your web server ip address, I like it this way as I have more control than host the domain on the hosting company's dns server.
You could also look at Amazon's Route53, or services such as OpenDNS - probably a bit more stable that using your domain registrar.
@extremesg: this puzzle me, why those 3rd party dns services needed, aren't the domain registars' dns servers already sufficent, the domain registars have millions of domains hosted, their dns servers at least better than the hosting one. what do you think
Probably easier off purchasing domains and a server with a prepaid.
