I'm trying to run some in-app campaigns, but I can't test to see if the tracking link is working right since it's an Apple appstore link, and I only have an android phone (it's also for a specific market, so the follow up question is about doing it through a VPN). Any software that will allow me to do this? If it goes well, I'd like to run a bunch of these campaigns.

Hm, if the app needs to be installed for the tracking "pixel" to fire, I'm afraid you will have to use an iphone. You could find someone from the GEO to test it for you, I'm sure there are people who would do this for a few bucks on upwork or fiverr.
Let's see if anyone knows of any workaround.

I've never tried to use an emulator - don't know if that would work or not. Definitely worth a try!
Failing that, I wouldn't mind testing the link for you. Either post it here or PM it to me AND update this thread to let me know so I'd check for it.
