combined lookalikes?
Which of the following scenarios would perform better?
1) an adset, targeting 2 different lookalike audiences that have been created from two different pixels but both from the same event on the same landing page. And each has 1000 events fed into them.
2) or an adset, targeting 1 lookalike audience that has been created from one pixel on one landing page that has had 2000 events fed into it.
(In both scenarios the lookalike audiences have been fed the same events from the same landing page)

Depends.
What's the NATURE of the SEED audiences for the 2 lookalike audiences? Just because they were collected using the same event on the same landing page, doesn't mean they have the same things in common (e.g. gender / age / interests / etc.) It depends on what kinds of ads and the ad targeting you were using while building each seed audience.
If the nature of the seed audiences is exactly the same, I'd say combine the two audiences. If not, then it may be better to tailor ads to each audience separately to cater to the demo+interests of each audience.

I think the lookalike audience with 2k events would perform better because the more source information the better the lookalike algorithm will be.
If we look at this in an extreme way, let's take those 2k events and split them into 20 separate audiences and then build lookalikes off that. Firstly, the system will probably tell you there aren't enough users yet in the seed audience. Secondly, even after you grow those audiences large enough to create lookalikes, they will each perform slightly differently from one another.
From what I know, these lookalike audiences are created using machine learning algorithms. Those types of algorithms rely on data to train on, so the more data you have in your seed audience, then better.
