What should I do if there's a daily cap on the offers that AM recommended?
Should I go for it or ask AM to recommend offers that have no cap?
I assume the cap could be a problem when scaling?

No sense in putting the cart before the horse.
Prove you can hit the cap first. Then ask for a higher cap.
Like Jaybot said, prove you can hit the cap first, then you can maybe get higher caps if they are satisfied with the quality.
In case not, then you can find a similar offer and send traffic to that offer once the cap is reached. Also, in case it converts better you can always focus all your traffic on the no cap offer. 
As guys above me mentioned, quality comes first, then ask for the cap increase.
Pretty much any solid advertiser has their offers capped for new affiliates, it's the norm. They are protecting themselves by doing this.
Limit your targeting to lower the amount of traffic you're buying, so you don't go over the cap. You can also rotate several offers within the same vertical/niche and distribute the traffic among them, so you stay withing the cap.
You can also go for no cap offers, but those usually use a flow where some sort of payment is required from the user and these are harder to convert. But it's an option too.
