I need some clarity as to why we need I guess what are called pro trackers. It's my understanding that tracking offered in the CAKE platform that seems standard with these affiliate networks isn't enough.
So why do I need a pro tracker (I think it's to test & track various ads, landers, headlines, etc.). What's an affordable tracking solution for a newbie?

The stats available on the aff network using CAKE will only tell you how many clicks went to each offer and how many conversions resulted from the clicks. Not much more.
Whereas what you're calling a "pro" tracker will do the following and more:
-Allow you to rotate landing pages and offers
-Show lander CTR
-Detect a plethora of stats from each visitor such as: device brand and model, mobile carrier/ isp, connection type (wifi vs. data), OS, browser (and many more)
-Display how many conversions are associated with each device brand and model, mobile carrier / isp, etc. etc. etc.
-Display how many conversions are made at each ad placement.
-Set up redirect rules to route visitors however you want - for example: If user browser language is X, send visitor to lander A. You can set up rules based on a wide range of parameters.
Summary: A tracker will help you to split-test creatives to find winners, and show you which traffic segments are in profit or loss so you can optimize your campaign targeting (e.g. bid higher for profitable traffic, and stop targeting unprofitable traffic).
