So Ive been working on this mobile dating offer for a while and finally got a decent paybump that put me into the green. Nothing big, but hey profit is profit. 
I have only been running it on premium inventory on TJ and Exoclick (banner traffic), so I know the quality is there.
However now it's time to scale, and my concerns is that once I move away from the Pornhubs/RedTubes/Youporns etc. into smaller/lesser known sites that my lead quality will probably drop.
Is this pretty much something that is inevitable and to run big campaigns lead quality just has to drop?
Of course I'll be using subIDs to separate the sources which help, but Im just curious to your experiences when scaling to multiple sites/traffic networks etc how you managed to maintain (if possible) decent lead quality as to avoid a pause or decreased payout.

You can check the quality while testing, considering that you are passing subids to the network while scaling and testing your campaigns on other sites.
Use the help of your affiliate manager here and ask him to check and tell you about the lead quality. Once he sees poor quality, can let you know the publisher id where is coming from, so you can pause it.
In order to scale, you simply have to risk this... as platinum said, mark your sources, pass the subids and make sure the AM is actively communicating with the advertiser regarding your leads quality.
You also don't have to run to RON straight away, there are several more networks with comparable traffic quality, test those first, leave the RON's for later ... trafficstars (xhamster and several more), trafficfactory (xxnx, xvideos), trafficforce (porn.com) ... stay away from exoclicks RON, but their premium placements are decent too... there is also traffichaus with their flat deals on several premium sites ... there is plenty of spaces to scale to, without risking too big quality decrease.
On a side note, smaller sites don't automatically mean low quality traffic, sometimes it's the other way around actually ... RON can fuck it up though, so careful with that.
