Wanted to ask what methods can you use to advertise an adult eCommerce site? Asking about white hat methods.

Depends a lot on what you'd be selling. Porn vs sex toys vs couples' games have very different potential outlets, for example.
Can you give us a bit more detail?
In case you're about to run a legit store, you can even use sources like adwords, bing ... not sure how facebook would react, but in case your products are on the very vanilla side like "lingerie, costumes ..." it might fly in some GEOs. I see ads for lingerie stores on FB all the time.
Next options for you would be the typical adult traffic sources, but do not try to advertise on the regular tubes, look for specific sites : forums, members area traffic, communities, maybe stories sites ...
Working with email marketers might be an option too, look for those with compatible email lists.
Then there are blogs with erotic/adult subjects ... hard to find, but some might be willing to review your products or just post a promoted article.
Swingers and amateur communities are pretty big, and they have the perfect audience for your products ... also check out the advertising options on escort sites.
It's a bit more work intensive to find the right traffic for this, since you can't just use a traffic network and buy what they have ... but there are good web properties that have the traffic you need.
You can also create an affiliate program and try to make deals with large site owners - or directly buy "menu tabs" from them.

Mostly thinking adult products like fleshlight, bdsm etc. Is there a legit way to run these through the big sources like AdWords, Bing, Facebook etc. or do people advise just going for the work intensive route of finding sources and negotiating things one by one?
Also does anyone know a good way to find relevant marketing lists?

Adwords and bing do allow sextoy products, but expect super high bids. Reviews are a good way to sell them, even better if you manage to rank for related keywords ... couple years ago I ranked on #3-5 in google for the word fleshlight with my review sites, it could sell up to 15 pieces a day, average order about $70 ... that was an awesome income source while it lasted 
Testing your product pages through adwrods or bing is a good idea, because if those users won't buy, different traffic types will work even worse.
Tubes will not work with this, not in the regular NTV or footer spots ... the menu tabs could work, if you can get good deals on them.
