I'm aware that Facebook doesn't allow dating on their platform unless you have a direct permission from them.
My question is: will it be okay if I drive traffic from facebook to an optin-form and on the thank you page I put some dating offers?

Facebook won't like that, in my opinion your better off cloaking to run your dating offers.
You will certainly have a much better chance than doing it directly (where your chances will be closer to zero).
However the funnel you envision will make it very tricky to get your numbers to back out if the ad and the opt in form both have nothing to do with dating and then on the thank you page you randomly pop in a dating offer.
