Are you seeing real LPs via a took like Advault?
For example, if I'm spying on Taboola for a certain offer/product I get tons and tons of results. Some are clearly affiliate links, some are the advertiser themselves. The problem is every single link redirects to the advertiser's clean LP.
I have a feeling I'm missing something. Is there a way I can figure out if the affiliates are using other LPs and somehow redirecting me to the clean LP?

I've tried a couple of spy tools over the last couple of months and had decent luck with one of them but pretty terrible results with the other where I ran into the same issues that you did. I assume that the affiliates that are really killing it are redirecting these spy tools based on IP addresses. It looks like the best way to search at this point is manually.

As spy tools have gained popularity, some affiliates have worked to cloak them. It then becomes a cat and mouse game for the spy tool to try to stay ahead of the affiliate. When a tool first launches, it picks up everything, because no one is looking to block it. Once people know it's there, the game I alluded to starts.
We (WhatRunsWhere) had a period where we were being obviously cloaked and worked very hard to revise how our product actually worked to prevent that. At this point, we do a much better job of finding what's actually running on the web and displaying it to our users.
My suggestion: try a number of tools and pick the one you find is best for you
