Getting green with AM is not a quick one. Most need 3-6months. And those are the good ones. Many never make it. Only way I see you getting into profit within 30 days is massive luck, or you find somebody who guides you around all the pitfalls out there.
If you need an stable extra income, paired with an tiny 1k budget, I would not spend any time with AM. I would rather work my ass of with quick cash generating jobs, flipping things, freelancing on Upwork, and other short term hustles. You can easily make 2-5k if you work 12hours/day. Once the current storm is over, regroup and start with more time at hand and a bigger budget.

True words. Gone are the days of millions from tiny investment. But there's always hope!

I'm all for being positive and hoping for the best, but I have to agree with sebastian and attila.
Using $1k to learn will likely not be enough to get you to xxx/day. You'd be extremely lucky to be breaking even after that 1k.
And I'm speaking from my experience of having talked to countless new people coming into the AM industry, and having read countless follow-alongs on this forum.
Your difficult financial situation will negatively influence the way you make campaign decisions. It's very important to NOT act/decide out of fear or worry - which is a trap you'll be prone to falling into when you're spending money you don't have, on campaigns you have no idea will result in profits or not.
Having said all that - if you still have your heart set on proceeding with AM, I'll do what I can to give you suggestions - and hope that others with more experience than me will do the same.
1) Is it wise for me to invest in AdPlexity now? Time is of the essence for me and I have no time to learn photoshop, and also trial and error different creatives
2) For Affiliate Network offers, most are “Apply To Run”, when I click on them, they need me to state the MEDIA TYPE and ANY COMMENTS
There's no way around learning photoshop and testing angles if you're trying to make display traffic work. If you're in that much of a hurry you may as well give up on AM right now. Here's a very rudimentary tutorial on how to make banners using photoshop:

As for applying to offers on aff networks - AFAIK affiliate managers mostly don't even read those comments. Just choose the traffic type that most-closely resembles the traffic you're planning to run and ask your AM to approve it for you.
Given your small budget, I would suggest choosing low-competition geos - in Asia, Latin America, Africa - and low payout offers of <$1.

Why is it better to test with E-commerce? I'm new here and still searching for the best traffic source and niche to start. I have budget of 1K and my goal is $xx/day in 5-6 months. Why will E-commerce be a better investment than The Mobile Cookbook: The Appetiser? Curious in your take on it.

BACKSTORY: Due to budget constraints, I took the advice of the senior STMers, and stabilized my financial situation first, (been juggling 2 jobs - 1 full time and 1 part time during last month!) while reading more on the forums, learning css, html, basic javascript, getting to really understand Affiliate marketing and now I'm back with a brand new rap! (Only this time, with Mobile POPS!)
