If tracking software is pretty much a spreadsheet of columns and rows...
Then can I create custom tokens, or "custom columns", and then populate those custom columns with the conversion data that the Network provides to my Postback URL?

[these brackets] are the language that the affiliate network speaks...

Yup, this is the core meaning of using a tracker, it can track whatever you configure it to track
