Lookalike Audiences - Best practices?

I'm currently testing out some lookalike audiences from my various email lists.

What are the best practices when updating an email list lookalike audience?

e.g.

If I have a list of 500 customers emails, upload them to FB and create a 1% lookalike. I start running ads to them and my email list grows to 1000.

If i then add the 500 new emails into the lookalike audience source and it updates the lookalike audience (I'm assuming it auto updates the lookalike btw), will this unsettle the ads?

Is it better to upload the 1000 emails to a new audience and create a new lookalike audience from that, then create a new campaign for it?

I might be overthinking this, but I really don't want to mess up working campaigns!

I always use a few hundred or thousand customer emails, and it seems to work out well.
