I have a legit email list of around 350K US/Canada based email addresses and currently using it to send out content only newsletters for the website where people opted into the list. Right now I'm using Mailchimp but want to improve open rates / click rates. Any suggestions on ESPs I should try?

Mailchimp is one of the best, imo.
You can try Campaign monitor, but you might want to write better subject lines.
Send to that list for pretty much free via Amazon SES. Self hosted https://sendy.co/ lets you manage it all.
