I've seen a lot of advice in regards to sticking to one vertical until you master it. From my understanding, that means to stick to a vertical like app install, pin submits etc .
What about the offer though? i.e. gaming, utility, etc. Is it advised to stick to one type of niche offer? e.g Master dating then move on to something else if you want etc .

I think it's important to sticking one vertical maybe even one country(depending on your budget) too.
In terms of budget, if you promote in tier 1 countries like United States or Canada, you'd have to dish out more money to test and see any progress on your campaigns due to high volume and competition as well.
For example, I'm in the sweepstakes vertical but the offers I promote can be with store vouchers, electronic products(iphone, samsung galaxy, ps4, etc....). I found that most of the time networks also has a vast array of sweepstakes offers and that's why I chose that vertical. Plus, if you can become a master in your niche then you'll know the in and out that vertical that could help avoid any potential mistakes you'll make when switching around different verticals.
It all depends how comfortable you are working with those type of offers.
If you like the "Game" offer vs the antivirus because you yourself know more about games then go for it. But nevertheless you should always try to stick with one thing before switching to another. I know sometimes it maybe frustrating that nothing seems to work out in your favor. But, my rule of thumb on staying with anything in aff marketing is if you asked the affiliate network for the best offer/ripped the best lander and can't get a campaign to at least -70 to -80% ROI then I would move on to another niche.

From my point of view focus is one important source of power especially for the long run.
Now, I am pretty sure that once you get to master a certain vertical, you become able to understand the psychological and technical processes that make the promotion perform well and this might be applicable from one field to an other - from gaming to utility or dating, etc
About the niche itself, it might take a bit of testing time to understand what is the one you will continue with. However, once you find it, concentrating on this niche I think can allow you to enlarge your experience in terms of understanding the real needs and interests of your targets, and gather so detailed knowledge that will become a source for solving issues and coming with new ideas in real time.
And anyway, let's say you choose gaming there are so many different games nowadays so you will still enjoy a huge variety and new stuff to discover and work with 
Once you got the campaigns on your prime niche rolling well enough you might be able to start considering additional opportunities to expand. But that will be totally up to you.

I've seen my clients have tons of success with a single, focused vertical that they've mastered. The biggest thing is taking your proven tools to scale out. There are ways to scale out by increasing traffic, or going into different countries, using everything you've learned to be successful. Many offers also are available in multiple countries.
As mentioned, it really will depend on your budget...
Indeed, if you focus on one niche you will eventual understand how it works, however is this knowledge 100% it applicable to other niches?. Some niches have different ways, specific ways, of working in terms of flows, LPs, banners, user psych... etc.
So, it depends on your personal situation (time, budget, network etc). In a simple way, you could center yourself on one niche, to learn and scale, as mentioned by ksoder, take a trustworthy tool ride the wave. Then you could take those earnings and, though you continue on that first niche, you could start testing other niches with a new budget and learn again 
If you are a one person team, I would indeed focus on one max two niches.
If you have more people in your team, you can build up competence centers and have everyone specialized in their own niches. Very important then is the knowledge sharing because although most verticals are islands on itself, they are interconnected.

Personally i think sticking with one vertical that you know well is a smart idea. That doesn't mean you cant test or try other verticals once you have a solid cash flow coming in because you never know when another vertical can work too. The main thing is not to spread yourself thin! I see lots of affiliates running one or two offers ( in a vertical) and when the offer gets paused or something may happen there earnings go to 0, always better to have more campaigns running with lower income then 1 offer with all of it!
100% agreed. Stick with a proven vertical until you can get it to work.
I've been sticking to the same vertical the entire year and these are the results that I have been able to achieve by doing so and forcing myself to FOCUS. There were many times when I wanted to jump into a different vertical and even tried it but stopped myself right away because at the end of the day I realized that there is money in everything. The real secret lies in how much FOCUS you can allocate to that one project and the determination you have to make it work.
FYI: This campaign is on it's way to breaking $30k rev for today.
