I guess it's maybe happening all the time but I was about to promote a "niche" voucher offer (e.g. "lady's apparel") and all of a sudden the advertiser is now showing "generic" kind of vouchers (free gas tank, etc)...
At the end my targeting was very precise to match the offer and now it's kind of useless as the offer is completely generic... also all of a sudden my LP doesn't make any sense at all...
Any tip to avoid this ? Should I ask my AM what is going on ? (the offer's title is clearly "niche" and not generic in their Cake install)

I don't think you can avoid things like this to happen.
It just as well might be that this particular offer has been pulled by the advertiser and your traffic is redirected.
Always ask your AM anyway.
Wow that sucks! But as h0mp has pointed out, this stuff does happen and there's little we can do to avoid it.
A few things to try:
1)Confirm with your AM to make sure that the offer DID get pulled (and not caused by a bug in the affiliate network system or your tracker etc.)
2)Tweak your current lander to customize it for the new offer.
3)Keep your landers generic but test a variety of offers to find your next best offer to work on.
Flow with changes and adapt to them - they can mean new opportunities - it's all in the perspective.
