Are there any types of offers or niches that can perform alright without a lander on mobile?
I'm currently working on the appetizer method (direct linking mobile) however the rest of the forum considers landers pretty much essential.
Just keen to hear from some more experienced guys/girls!

You certainly don't need a lander for broad appealing app installs like browsers, and battery optimisers. I'm not saying they will perform better than with a lander but you can still definitely make profitable campaigns.

Glad to hear that too as I'm currently getting in to mobile without creating my own landers 
Figure out which offers people would 'buy' on impulse but which they actually don't need.
There's a reason why there's a candy display at the cash register in the super market and why the bread is found all the way back in the shop.
Candy.. you don't need it but it's jummy. You're waiting in line, see it, take it and pay for it at the same spot.
Bread.. you need it but to get there, you'll have to pass half the inventory of the shop. The layout of the shop will make you pass the other half of the inventory on your way to the register. And all along the way, you will be picking up crisps, cookies, pizza's and ice cream.
