as long as you see ads for it, there are people making money out of it. and diet/skin is pretty much everywhere. first of all on display!
The answer is Yes. but lets break it down a bit. Diet, Skin, Muscle, PeEn, ect convert no matter what traffic source you decide to use. If display is where you going to set up shop then think more on who your target demo is and build your target sites and keywords around highest ratio of your target demo vs everything else. There are some great tools out there to help with Display advertising like WhatRunsWhere and AdBeat.
Yes it is converting. Things have changed and many guys are not pushing the volume that they once were. It still makes big money though.
