How Many Domains Can I have on a VPS?

How many domains should I host on a VPS before I decide to get another one?

Unlimited basically.

When deciding to get a new server you should base it on the number of clicks ( volume ) not number of domains.

Actually, one last thing with VPS (I'm coming from the Shared Hosting side, can you tell).... Does it work the same, CPanel, etc. or does it depend on what hosting company I use?

You can choose to have Cpanel so it will look identical. It should cost like $10 more a month.

With most companies you can also upgrade your VPS on the fly. When you are hitting higher volumes you could always upgrade to more ram and CPU cores.
I would also recommend going for a VPS with SSD storage, you won't regret it.

If you want cPanel you'll have to license and install it yourself.

If you're coming from shared hosting you may really want to go to managed hosting where a support team does a lot of the back end stuff for you, otherwise expect to have to hire a sysadmin or figure out how to do everything through a console (inc cPanel setup and prerequisites).

BeyondHosting is the go-to suggestion but WiredTree are also good.
