So far I've been playing the really-specific-angle game targeting interests. On the upside my ads and lp's have a high CTR% and conversion%. On the downside I'm not getting the traffic I want to as my demo's are too small.
I've read through the CTR guides here and I want to start making ads and lp's to a broader demo. First thoughts were - generic shocking images and red borders. Can I call out age, sex and location though in newsfeed ads?

FB's ad guidelines are, for the most part, independent of placement.
So no, you can't call out user attributes unless it is relevant to the specific offer/product/service being advertised.
Hm, I'd call the finer details like age gap, geolocation etc. out on the LP. But stuff like "..to Australian women" (while targeting females in AU) wouldn't generally go through in the ad text? Got to stick to shocking (but relevant) images and red borders then for larger demos 
Women is significantly general so might get through but you never know with Facebook.
Just don't say "are you so and so". It's easy to identify with people without explicitly calling them out, just be indirect.
Not sure why you're intent on shocking images and red borders, there's plenty of things to test that are more original!
Thanks Zeno! With a broader demo, the angles in the ads should probably be more offer-specific rather than demo specific (as I've used to with interests) it seems.
