Which work best, professional looking pages or the amateur looking ones? I also see a lot of pages walk you through several pages of simple questions, what is the benefit of that? Is it a commitment thing or getting you to yes statements? Does it work better than static pages. What is used to create?

It very much depends on the traffic source, angle, vertical, and random chance.
Testing professional vs amateur design is definitely something that is worth doing early in a campaign.
In addition, there are multiple versions of both "professional" and "amateur" that you could try. For example, a pro design could lean toward flat design, photography, skeumorphic design, etc.
As for the questions landers - it's good sales psychology to persuade your prospect to say "yes" to almost anything. However, the psychology of many questionnaires is much cleverer than just that. Search for Finch's post on "Rules Landers" to learn much more about that.
