Can you please let me know which dedicated server plan I should go with:
On the I3 plan we have several options to chose from.
For $150 per month we have two configurations.
1) I3 dual core 3.3 Ghz / 8 GB's RAM / 2 x 500 GB HD's ZRAID1 Mirror / Directadmin / 100 Mbps Unmetered Transfer
2) I3 dual core 3.3 Ghz / 8 GB's RAM / 1 x 64 GB SSD Cache / 1 x 1 TB HD Storage / Directadmin / 100 Mbps Unmetered Transfer
For $175 per month we have two configurations.
3) I3 dual core 3.3 Ghz / 8 GB's RAM / 2 x 250 GB SSD's ZRAID1 Mirror / Directadmin / 100 Mbps Unmetered Transfer
4) I3 dual core 3.3 Ghz / 8 GB's RAM / 2 x 1 TB HD's ZRAID1 Mirror / Directadmin / 100 Mbps Unmetered Transfer
I have absolutely no clue as to which plan I should go with for Mobile Traffic..

Pure SSD disk storage over traditional mechanical drives any day of the week.

I second the SSD choice.
It makes a huge difference on serving files and MYSQL read speeds.
