Multiple emails -> one gmail > specific reply from address - HOW?

Let's say I have multiple emails people can contact me on.

1) Me@123.com
2) Contact@Company.com
3) Hey@Email.com

i want all of those to come into my central gmail account mememe@gmail.com

so-far-so-good, i can do that with simple redirects - now here's where i have a problem:

how can i make it, so when i press reply to the email that came from me@123.com, my address will be me@123.com instead of mememe@gmail.com?

When you click "reply" in gmail you can choose your email.

GMail -> Settings -> Accounts

"Send mails as:" and here select the first field "Answer from the same address to which the message was sent".

Do you know if checking and replying an email on your mobile allows you to do the same thing?

doesn't doing this result in the recipient seeing something like "sent from youraddress@gmail.com on behalf of addressyouwanttoshow@whatever.com" or something like that? curious if it's changed.
