Ask your affiliate managers, obviously. Also check the spy tools for your traffic source, and see what offers are popular there.
And finally, just run stuff that looks interesting! Offer research is somewhat overrated - you'll never really know how well an offer will convert until you test it. Many of my best-converting offers were ones I just picked because they looked appealing, and some initial research (signing up myself) showed the signup flow seemed pretty good.

There are many. For adult there is the STM adult spy tool (link at top of forum). In other cases you can spy yourself just using VPNs. For FB there is SocialADNinja and LotsofAds, then there are platforms that deal with display, adword etc. traffic like WhatRunsWhere, AdBeat, etc. Don't expect them to be free though - competitive ad intelligence is big money.
