There are a ton of evergreen niches that are popular such as dating, weight loss, skincare, fashion/beauty, ecigs, adult entertainment, bodybuilding/muscle, careers, insurance, credit reports, credit cards, and more. Just take a look at the categories on any affiliate network.
Health, wealth & relationships.
Everyone wants to look and feel great, be rich and get jiggy.
I don't know about others, but If I'm after what is popular right now (trends) I use google trends and then sort it into a category/niche and go from there on my offer search.
