In a traffic junky campaign with 8 individual ads in the campaign for example, how do I track which ads are being clicked/converted the most? Can you pass this sort of data through to CPVLabs or not?
in addition to adding unique subids for each ad? I create a separate campaign in the tracker for that placement / trafficsource, and then use subids to further separate each individual ad and track that way.

CPVLab can track the Ad ID by enabling "Capture Extra Tokens" and passing your Ad ID to your tracking link in the query string variable that you define the "token" as during your campaign setup.
