How many variation changes should I be testing at one time?
For example, should I just be testing different CTA buttons across a couple variations and that's it? Or should I be changing multiple different things on each variation page and just see which one performs the best?

Hey, the number is based on how much you want to spend.
The more you spend, the more data you have, more variations you can test at the same time.
If you don't have crazy budgets I would star with 3 different concepts and move from there.
