Switching from Windows to Mac - recommend tools / apps ?

So after refusing to stick with the trend for years and thanks to the follow along contest I finally switched to Mac as well. Being a pretty fresh face when it comes to Apple products (like I'm using my ipod / iPhone / macbook air purely for travel and browsing) I'd love some recommendations of you stackers about 'must have' tools and apps / programs on Mac. Not talking about basic stuff like Dreamweaver or Photoshop, much more for stuff that's probably not available on Windows and makes the AM life easier on Mac

Maybe we could create some kind of toplist for tools for Macs or at least a list of suggested apps by the the fellow MacStackers, I'd be read to organize in this opening post according to feedback given from you guys if there's interest. Thanks in advance for all tips and hints about that topic!

To mods: I put this thread in AM with the intention of creating a list of suggested programs and apps for Mac, if a different subforum is more suitable, feel free to move the thread please.

I use mostly :

CyberDuck - FTP / SFTP
Photoshop - Design
OpenOffice - CSV imports / Profit Reports etc
Coda - Simple script editing / Programming
Spotify - Background Music
Terminal - When I need to SSH to my servers
Evernote - Note Taking
Mac's Task App - My daily todo list , synced with my iphone and ipad
F.Lux - Good for your eyes

These are the main apps , apart from the usual skype / dropbox / chrome / lastpass etc.

I'd add to BBrock's that I use Coda for both text editing as he does and FTP. All in one.

The difficult thing is the mail app - sparrow was ok for a while, but once you have a bit of mail in it search doesn't work properly.
